Simple Vegan Slaw
My body is prone to general crumminess when I eat take-out too much (a problem I seem to run into all too often living in the city) ,and I feel lethargic and low on energy. To combat this I try to eat lots of raw vegetables, but I’ll admit that it can get pretty boring eating plain veggies sticks or ants on a log too often, so I try to mix things up a bit. Over the last year this simple slaw has become one of my favorite lunch foods no matter the season. Plus it’s great to take to BBQ’s or potlucks where there are a variety of dietary needs!
The slaw is really simple. Just chop up some cabbage (it doesn’t matter what colour).Toss in a handful of shredded carrot. Mix with a drizzle of each of the following to taste : Tahini (sesame paste), apple cider vinegar, oil, lemon juice, and a little salt and pepper (mix the dressing separately if you are feeling particular about the taste, so that you can taste test/make changes beforehand, personally I like more vinegar). I also like to include whole toasted sesame seeds on top for some added crunch and flavor but it’s not necessary. You can make ahead, or not but it tastes best chilled.
